West Cork Distillers to niezależna irlandzka destylarnia, założona w 2003 roku przez trzech przyjaciół z dzieciństwa: Johna O'Connella, Denisa McCarthy'ego i Gera McCarthy'ego. Początkowo działająca w małej wiosce rybackiej Union Hall, później przeniosła się do Skibbereen w hrabstwie West Cork.
