Peat gives whisky its smoky, campfire character — the result of drying malt over a peat fire. Intensity is measured in ppm of phenols, from a barely-there wisp to the extremes of Octomore. Beyond the Islay classics (Ardbeg, Laphroaig, Lagavulin), peated whisky is now made everywhere from Japan to India.
