Midleton Distillery in County Cork is the heart, lungs and brain of the Irish whiskey industry — often called the "Vatican of Irish whiskey". Rather than scattering production across dozens of small sites, the Irish concentrated it in one vast place. It is owned by Irish Distillers, part of France's Pernod Ricard since 1988.
Two sites stand side by side: the historic Old Midleton (1825, home to the world's largest pot still at over 140,000 litres — now the Jameson Experience visitor centre) and the ultra-modern New Midleton (1975). Its huge pot stills and column stills make wildly different spirits (Single Pot Still, Single Malt, Grain) that feed a whole portfolio of brands:

The secret of its flavour is the native Irish Single Pot Still style — a mash of malted and unmalted barley, triple-distilled for a creamy texture and a gently spicy profile. Over 1.3 million casks mature in its warehouses.
